I know this sounds very restricting but believe it or not, it really isn't. I have discovered how to make great meals and desserts! I will be posting recipes of things that I have made that get the thumbs up from my family. It has been a learning experience and I have thrown out a couple of failed attempts, but through the process I have discovered some great paleo recipes that my family and friends really like. The first recipe I am going to share is for chocolate chip cookies that I brought to a recent house warming party. People actually asked me for recipe at the party so I decided to make this my first recipe post.
Some people ask me why I am doing this diet. “It’s not like you have to lose weight,” they say. Over the past few years doing the 28 Days for Health Cleanse I discovered how much better I felt after doing it. I tried to follow the diet pretty close even while not cleansing and noticed my headaches would come back if I wasn’t very strict. I also discovered that eating things like black beans and brown rice, which are allowed on the cleanse, seemed to give me mild headaches as well. I’d always assumed it was probably the way it was prepared at the restaurant.
A couple of months ago someone very close to me was diagnosed with the auto immune disease M.S or Multiple Sclerosis, so I went in to full research mode. What I discovered has changed our lives. We discovered the Wahls protocol from the book: The Wahls Protocol: How I Beat Progressive MS Using Paleo Principles and Functional Medicine by Terry Wahls M.D. http://terrywahls.com/about-the-wahls-protocol/ This book led me further into research on the paleo diet. Since changing our diets, her M.S. symptoms have improved dramatically and for me, I have lost over 10 pounds and feel fantastic.
So to answer the question of why I do this diet (lifestyle), I originally started doing to help and support someone and I continue because I know my health is much better and I feel fantastic. Nothing tastes better than feeling great.

Paleo Chocolate Chip Cookies
2 cups almond meal, or almond flour
¼ cup coconut oil, softened (non-vegans can use butter)
3 Tablespoons pure maple syrup
¼ teaspoon sea salt
½ teaspoon baking soda
2 teaspoons vanilla extract
½ cup dark chocolate chips
Preheat oven to 350F. In a medium bowl, whisk together the almond meal, salt, and baking soda, then add the coconut oil, maple syrup and vanilla extract and mix well. Fold in the chocolate chips, then drop batter by rounded tablespoons onto a baking sheet lined with a Silpat, or parchment paper. Bake at 350F for 8-9 minutes, until the edges are golden brown. Allow to cool on the pan for 10 minutes, then serve warm or allow to cool to room temperature.
